Christmas Dinner: Christmas Lamb with an exotic touch

_MG_0318In some countries lamb is traditionally served at Christmas.

We wanted to add an exotic flavor to all the delicious food for the feast, so we visited Chef Rajendra Singh from the Rangoli Indian Restaurant of Movenpick Resort in Sharm el Sheikh.

He kindly gave us the royal recipe of his famous Lamb Chops Masala; a traditional North Indian dish with aromatic spices.

He started his career 14 years ago in New Delhi and worked in the famous Oberoi and Kempinski Hotels in Mumbai for many years.

Four years ago he moved to Sharm, to Movenpick, where we all can enjoy his delicious Indian food. He prepares the dishes always with care and from the highest quality of ingredients.
“I prefer to speak directly to our guests by the table, in order to help them choose, so we can satisfy all that they dream for dinner. We have a great variety of food, mild, medium, spicy or even vegetarian.” – he said.

The Lamb Chops Masala is a dish that comes from the Punjab region; it was invented for King Sher Shah Souri and became his very favorite dish.
An easy to prepare, but exquisite dish for your Christmas menu everybody will enjoy.

 

INGREDIENTS :
Oil (as required )
Whole cumin – ½ tsp
Garlic – 4-5 cloves
Ginger – 5 gr.
1 green chili – fine chopped
Lamb chops – 500 gr.
Tomatoes – 4 pieces
Onion – 2 pieces
Fresh coriander – half bunch
Water – 2 cups
Salt – as preferred
Coriander powder – ½ tsp
Tumeric powder – ½ tsp
Roasted and crushed cumin – ½ tsp
Red chili powder – ½ tsp
Garam masal – 1 tsp
Pinch of kasoori methi (typical Indian spice)

 

PREPARATION:
Heat 4 tsp oil in a pan, add the whole cumin seeds, green chili, the fine chopped garlic and onion and fry it till it is golden colored.

Add the turmeric, ginger and keep it on slow fire for 2-3 min.

Then add the lamb chops, the finely chopped tomatoes, cook it for about 10 minutes, add all the remaining spices and pour 2 cups of water on top. Now cook it on a low heat until the lamb is tender and add 1 tablespoon of cream.

Now it’s ready to be served, while it’s still steamy hot.

Garnish with coriander leaves and fine sliced ginger and green pepper.
